Stuff I Do Eat

I’ve been asked to share examples of what I’ve been eating! I'm posting by meal, rather than by day, since I won't post everything.

NOTE: You'll notice that I usually do not include amounts. After many years of logging meals and counting calories/points on various diets, I am pleased that this plan working without measuring or weighing. The idea is that you eat foods you can and pay attention to when you feel truly satisfied. Then stopping. (The stopping is easier with healthy food than it is with unhealthy food.)

TIP: Make meals that make good leftovers so you don't feel pressured into finishing food to avoid wasting it.

Breakfasts:
  • Bob’s Red Mill Mighty Tasty Hot Cereal with a bit of honey and milk
  • Sautéed polenta patties, eggs from our chickens, super juicy fresh pear
  • Oatmeal (rolled or steel-cut) with raisins, cinnamon, milk, and a touch of honey

Elevenses/Lunches:
  • Half a Greek salad or Cobb salad from my work's cafe (with vinaigrette-style dressing) 
  • A cup of chicken chili with a sprinkle of cheddar

Snacks:
  • “Natural” white cheddar popcorn
  • I often keep pot of peppermint tea to sip on all day at my desk, which is helps satisfy my sweet tooth
  • Masa fritters - mix masa flour, a dash of salt, and water as directed, form into patties (instead of pressing into tortillas), pan-fry in olive oil on both sides (not too deep or it gets greasy!), drizzle with cinnamon-honey. OMG YUM.
  • Pupusas - (from Weelicious!) mix masa flour, dash of salt, taco seasoning, and water as directed, flatten as much as possible with your hands, place a little grated cheese in the middle and fold edges over to make a cheese-filled patty. Pan-fry in a little olive oil on both sides!

Dinners:
  • Roasted salmon filet, sautéed Brussels sprouts, and rice with soy sauce (my husband is amazing)
  • Baked chicken thinly crusted with masa (corn) flour, roasted broccoli, spinach salad
  • Cheeseburger meatballs! (super-lean ground beef or turkey, rolled oats, ketchup, mustard, spices, Worcestershire sauce, soy sauce, grated cheese, form into balls, bake until brown and done inside!), fresh spinach, quinoa pasta
  • Chicken and veggie stir fry with mangos on rice noodles
